Beef & Cheese Pinwheels
Preparation Time: 20 minutes
Refrigeration Time: 30 minutes - 6 hours

Servings: 32 appetizers

 
12 ounces thinly sliced deli roast beef

1 package (4 ounces) low-fat herb flavored cream cheese
  (1/3 less fat than traditional cream cheese)

4 large flour tortillas (about 10 inches)

2 cups spinach leaves (about 20 leaves)

1 jar (7 ounces) roasted red peppers, rinsed and drained

Directions

  • Spread cheese evenly over one side of each tortilla.

  • Place deli roast beef over cheese leaving �-inch border around edges.

  • Place spinach leaves over beef.

  • Arrange peppers down center, over spinach.

  • Roll up tightly and wrap in plastic wrap. Refrigerate at least 30 minutes or up to 6 hours before serving.

  • To serve, cut each roll crosswise into 8 slices. Arrange cut side up on serving platter.  

Nutritional Information per serving (1 pinwheel) figured with regular cream cheese: 81 calories; 5 g protein, 10 g carbohydrate; 2 g fat; 259 mg sodium; 8 mg cholesterol; 1 mg niacin; trace vitamin B6; .3 mcg vitamin B12; 1 mg iron; 1 mg zinc. Note: Nutritional analysis included using 1/3 less fat cream cheese and adding herbs, onion, chives, etc.
